Vegan & GF Chocolate Chip Chickpea Cookie Dough

As everyone knows chickpeas are my go-to ingredient, and for good reason. When Cooked, Garbanzo Beans have a delicious nutlike taste and a buttery texture, yet pasty and starchy at the same time. These magical beans are often known as one of the “World’s Most Healthiest Foods.” Garbanzo Beans are high in Protein, molybdenum (Molybdenum may help against Cancer, a catalyst for Enzymes, fights Inflammatory and autoimmune Diseases), manganese, folate, copper, fiber, phosphorus, iron, zinc. Chickpeas help to increase satiety, boost digestion, keep blood sugar levels stable, increase protection against disease and more. It’s important to incorporate these super nutrient dense beans into your daily diet, not only to make you feel fuller faster, but to also offer a benefit besides fulfilling your snack cravings. Often times I see people who are trying to lose weight and trying to get healthy, snacking on “low calorie” and “low fat” pre-packaged, overly processed snacks. It’s important to understand eating these snacks rarely make you feel full, and are giving your body very little nutritional benefit. It’s so important to snack on foods that are protein/nutrient rich, which helps to make you feel full and to curb food cravings and unhealthy snacking. Studies have shown that consuming fiber is correlated with having a lower body weight. Cookie dough was always my favorite guilty-pleasure food as a kid. It was so taboo due to the raw egg, and of course the typical high sugar content made me bounce off the walls and eventually crash. I love creating alternatives to classic guilty pleasure snacks, so you don’t have to feel like you’re giving up the joy in eating! I am a firm believer that consuming healthy food doesn’t mean suffering a tasteless, bland, existence, but finding tasty alternatives that not only make you feel good, but look good too, after all, you are what you eat! I’ve tried multiple combinations for my Chocolate Chip Chickpea Cookie Dough but I find this particular recipe is the most similar to traditional cookie dough. You can add your favorite toppings/additives and customize it as you please. I always suggest using Vanilla Beans instead of Vanilla Extract, for the flavor is so much more intense, and natural, but they can get pricey, so use what you have (or what you can spend) As for chocolate chips, try to opt for Organic, Vegan, Dark Chocolate Chips (I used Lily’s Dark Chocolate Chips) they have higher antioxidant content, no processed sugar, and zero preservatives.
