Savory Chickpea Waffles with a Trio of Dipping Sauces

I keep pretty busy during the week so I try to create recipes that are quick and easy to make, and also nutritious. Garbanzo beans (chickpeas) are one of my go-to ingredients that are extremely versatile, and nutritious. Chickpeas are very high in protein, and have the ability to be added to sweet treats and also rich, savory dishes. Garbanzo bean flour cooks super fast, so it’s a perfect base/substitute for flour in breads/baked goods. I found this adorable mini waffle maker for $5.00 in Home Goods, and I’ve been using it quite frequently. If you don’t have a mini waffle maker, a regular sized maker will suffice, just double the batter when adding to the maker (1/2 cup instead of 1/4 cup batter) The dipping sauces are a few of my go-to sauces for several of my favorite dishes, but you can also use some of your favorite dipping sauces instead. Savory Chickpea Waffles with a Trio of Dipping Sauce

Servings: Makes approximately 18 waffle sticks

Waffes:

2 cups Garbanzo Bean Flour (I use Bob’s Redmill)

1 1/4 cup Filtered Water

1/4 cup Nutritional Yeast

1 tbsp Almond Oil (You can also use Extra virgin olive oil)

1 tsp Sea Salt

1 tsp Black Pepper

1/8 tsp smoked paprika

1/4 tsp Oregano

1/4 tsp Chili Powder

Directions:

  1. Add dry ingredients into small mixing bowl, slowly add water, stirring as you go
  2. Add Almond oil, whisk until batter consistency, breaking up any dry chunks as needed
  3. Once completely smooth consistency, add 1/4 cup batter into waffle maker (if you don’t have a mini waffle maker, use 1/2 cup in a regular size waffle maker)
  4. Allow to cook completely in Waffle maker
  5. Once all of the batter is made, let cool, cut into strips

Dipping Sauces

Maple Mustard Sauce

Ingredients:

1/4 cup pure maple syrup

1/2 cup organic dijon mustard (I purchased mine from Target)

1 tsp lemon juice

Salt and Pepper to taste

Directions:

  1. Add all ingredients to small bowl and whisk until completely smooth

Garlic Tahini Sauce

Ingredients:

1/2 cup Tahini Sauce (I purchased mine from Trader Joes)

2 Garlic Cloves

1/2 tsp black pepper

1/4 tsp sea salt

1 tbsp Extra Virgin Olive Oil

1/4 cup Warm Water

2 tbsp Green Onion

1 tbsp Coconut Sugar

1/2 tsp lemon juice

Directions:
1. Add all ingredients to blender or food processor

2. Pulse until completely smooth

3. Add to small serving dish

Creamy Cilantro Sauce

Ingredients:

1/2 Ripe Avocado

6 tbsp Lime Juice (approximately 3 limes)

1 cup Chopped Cilantro

1/4 cup Avocado Oil

1/4 tsp Cumin

1 tsp Onion Powder

1 Garlic Clove

1/4 tsp Sea Salt

1 Jalapeno (seeds removed if sensitivity to heat)

1 tbsp Coconut Sugar

2 tbsp water

Directions:

1. Add all ingredients to blender or food processor

2. Pulse until completely smooth

3. Add to small serving dish
