Savory Pumpkin Chili Hummus

Let us rejoice, for pumpkin season is among us. I love pumpkin, but of course, a majority of recipes involving pumpkin are super rich, heavy desserts that are more of a treat than anything.  I wanted to incorporate pumpkin into an everyday occurrence at my apartment, hummus. I love dips, anything I can put on a crispy piece of brown rice bread, or dip with carrots, celery, or to add to sandwiches, wraps, salads etc. is okay by me. I love adding the complex flavors of the hummus to super simple meals. I also love anything super spicy, so of course, if you don’t like spicy foods, make sure to deseed the chilis before broiling them. (if you like it even spicier add extra seasonings to spice it up!) This recipe is incredibly easy to make, fast, and gives you instant gratification (you can eat it straight from the blender if you want!) If you’re cooking for a holiday party, be sure to double, (or triple) the recipe. I hope this gets everyone in the mood for fall, it certainly did the job for me!

 

Servings

Serves 4

Ingredients 

1 15 oz can of chickpeas drained

1 cup organic pumpkin puree

6 thai chili peppers

6 garlic cloves

2 tbsp extra virgin olive oil

2 tbsp raw coconut sugar (or any sweetener of choice)

1/4 tsp cinnamon

1 tsp salt (I used pink himalayan salt)

1 tsp oregano

1 tsp cumin

1 tsp chipotle chilli pepper seasoning (you can use cayenne pepper or any other pepper you prefer)

1 tsp smoked paprika

 

Directions:

  1. Preheat oven to broil
  2. Remove the stem of the chili, and slice down the center
  3. peel garlic
  4. place garlic and chilis in baking pan, drizzle with extra virgin olive oil
  5. broil until browned (approx 10 minutes)
  6. In food processor or high powered blender, add all of the ingredients and pulse stopping every minute to scrape the sides, making sure everything is smooth
  7. Spoon out, and enjoy! (refrigerate leftovers)

Note: I enjoy it both room temp and chilled, so whichever way you prefer

Garnish with your favorite toppings, pepitas, paprika, roasted red pepper, etc.
