Strawberry Superfood Protein “Milkshake”

I rarely crave anything strawberry. As a kid it was either chocolate or vanilla, with loads of toppings. But this “Milkshake” is about as tasty as they come. The strawberries go so well with the vanilla bean flavor, and my secret ingredient, Goji berries! Now, I try to work goji berries into my diet regularly, but to be honest, I do not love the way they taste. I seldom use them as a topping because I just don’t prefer chewing on them, but adding them to this blend boost the antioxidant content and actually adds to the overall flavor. Goji berries are the epitome of a skin food and super fruit ( they’re considered a fruit and also an herb). They are loaded with antioxidants (which neutralize nasty free radicals) and beta-carotene, a pigment found in plants and fruits that helps promote healthy skin. They also have been known to help boost the immune system with their vitamin content, and are known to help protect eyes. While I’m a firm believer that if something is good for me, I’ll add it to my diet in some way or another, I prefer to do it in the tastiest way possible!

Strawberry Superfood Protein “Milkshake”

Servings

Serves 2 (Or 1, if you’re appetite is anything like mine)

Ingredients

1 frozen, very ripe banana

1 cup frozen butternut squash (I purchase mine from Wegmans, Whole Foods, or Roots and they generally come in 1/4 inch x 1/4 inch squares)

1.5 cups frozen sweet potato (I purchase mine from Wegmans, Whole Foods, or Roots and they generally come in 1/2 inch x 1/2 inch squares)

1 cup strawberries (frozen or fresh)

1 tsp cinnamon

2 tbsp goji berries (I use Sunfood)

1 scoop vanilla plant protein (I use Vega Vanilla recovery protein)

2 cups unsweetened almond milk (or any other plant based milk)

1/4 tsp ground vanilla beans (not necessary but adds a fantastic flavor)

Note: You can cut your own veggies and fruit and freeze them if you have some sitting in the fridge and want to utilize them instead of going out and buying new

Directions

  1. Add ingredients to any high powered blender, scraping the sides as you go. (Depending on the blender, this may take longer than 3-5 minutes)
  2. Stir mixture in blender as necessary, making sure everything is blended and has a thick creamy, milkshake consistency
  3. Add more almond milk or coconut cream until you get your desired consistency
  4. Spoon out and enjoy!

Add any of your favorite toppings!!

  1. Ok this looks absolutely delicious, I did a whole series about superfoods on my blog but this recipe really gets me excited! Something about strawberry milkshakes remind me of childhood, I will definitely be trying out this recipe!
